Habitat
Structure — pilings, bridges, jetties, oyster bars, and reefs in coastal and inshore waters. Rarely caught away from hard structure.
Best Season
Winter and spring. Schools around structure in cooler months and pre-spawn staging.

Rising tide when fish move onto structure to feed on barnacles and crustaceans.

Black and white vertical stripes like jail bars. Prominent human-like teeth (incisors and molars) for crushing mollusks. Deep compressed body. Sharp dorsal spines.
Excellent — sweet, white, firm flesh. One of the best-tasting inshore fish despite difficulty filleting.
